That's your traction control button to stop the wheels from spinning. Traction control should be on, unless you press the button. You will be informed that the traction control is off by a light on the dash.
I'm sorry, but I can't see how a manual top fetches more money than a electric top. Yours is the 1st e36 that I've seen that has a manual roof, especially for it's age.
Yes, yours that have A/C. The gearstick and handbrake gaiter are after-market. And it looks like you got a cover on the armrest.
Depends on the mileage, but ÂŁ3k would be too high. The only special thing I can see with this car is the exterior paint colour and M3 bits. That's about it.
It doesn't have heated front seats, upgraded hi-fi system, electric hood, or that 6 cylinder engine.

As you can see, the price will depend on the condition of the car, the market and how good summer will be. You can make a list of good things and bad things that your car has. Then sort out the bad things, and then pop it up on eBay between ÂŁ2k and ÂŁ2.5k and see how it goes. It won't be worth as much as the straight 6 engines, unless it's something special.
