I bet I could find a cam for it

CAT-CAMS they offer some - really nice cams too!

Wouldn't bother too much about the stroker if you are thinking about forced induction...

ERM.......... CCR Racing do a supercharger kit and I would recommend Jabba Sport for tuning

There is some cams available, you can use US M3 3.0 ones, as both engines had a similar head.
Finding them will be the main problem though, Euro M3 cams won't do.
There was some stroker kits possible, but I'm not sure how well they would work on a 320 without checking first. The 325 M50 could be stroked to 3.0, using an M54 330 Crank, and I think the rods to match, but again, don't rush out and buy anything just yet!

A small but cheap parts bin mod is to get the exhaust manifolds from a 323 or 328 which have better flow characteristics, and are a direct swap, but fitting can be awkward with rusty manifold studs.

I can of course supply you with a chip which will give about 14bhp, and will improve the feel of the car, but remember that a 325 engine will fit giving an extra 42bhp for 300-ish quid plus fitting.
The majority of those mods can be swapped directly between the engines, so tuning a 320 isn't dead money if you are thinking about a 325 swap in the future.
